I think Hank has the solution for you; if your cruise dosen't either begin or end in Rome, you're not going to see much except the highway between the Eternal City and the port. If you go with Solstice you will have two chances to see the city.

Or if you should decide to go with Princess, whether you start or end in Venice, you will have an overnight there, which will give you some extra time.

Do as Hank suggests: fly to Paris for a couple of days; then to a cruise that starts in Rome and ends in Venice--or the reverse.
