Since you are going on Grand Princess, you might consider a mini-suite; you still have only one bathroom, but at least you will have room to streatch out a little.

Two cabins may still be the better choice, even if they are inside cabins; but the minis have a nice large balcony and a sitting area, so you shouldn't be tripping over each other.

Princess also has a Family Suite, which is actually two connected mini-suites, which would be ideal--but also quite a bit more money.
