I've had them in many variations. Some like crab cakes, some like hush puppies, some that were the conch, seasonings, and onions/celery in the inside with all the coating/breading on the outside. The last version was the best. Like crab cakes, it depends on how liberal the maker is with the conch meat. We've all had crab cakes that were mostly bread, yet every so often you find a place that makes them with mostly crab.
