I've had pretty good success with Comfort Inn hotels. Nothing too fancy, but they are owned by Choice Hotels. The Comfort Inn and Suites Port Canaveral looks like they have a "Park and Cruise" package, which includes a shuttle to and from the port if you stay with them.
