I'd like to see sweetbreads on the menu. Celebrity is the only line where I've been able to get them. I'm not much for the guts and hooves of animals but I make an exception for sweetbreads.
(sweetbreads are the thymus glands from cattle, pigs, or sheep, with the best being from veal calves)
