Nita, On formal nights you will see people dressed from complete black tie and gowns to what some would consider Sunday Church outfits. On the more casual nights for women would be nice pant suits, sun dresses, or even a nice capri outfit, for men you will see some in the dining room with suits or most in nice dockers and golf shirts or even nice slacks and hawiian shirts. Carnival does state no shorts, tank tops and jeans in the dining room. So just pack like you were going out for a nice dinner or getting ready to go to church. Personally we love the formal nights, its the only time I can get my hubby in a Tux, of course you see less tux's on a Carnival ship then you would see on your more premium lines, but hey its still fun.
