Any suggestions on what to do in Belize and Roatan?

In Belize the cave tubing is praised and many people enjoy snorkeling and using Coral Breeze for this adventure. We were just there last week and these two things were the things I heard the most praise for.

In Roatan many went snorkeling but I did not hear a lot of talk about any great tours. We personally just checked out the island and did not take any tours.
