I'd make Princess Cays my relaxing day. It's a nice private beach, the snorkeling is good, they have water toys you can rent. St. Thomas and St. Maarten are good for shopping. St. Thomas has 3 really nice beaches, Magen's Bay, Coki Beach, and Sapphire Beach. Sapphire Beach is much less crowded, there are a lot of little rocks getting into the water (the north end is the best for entry), but there is good snorkeling. Magen's and Coki are going to be busy, but they will have more water toys. If you feel adventurous, grab the ferry to St. John and a cab to Trunk Bay. It is an awesome beach with a self-guided snorkel trail about 50 yards from shore. Most people go to Orient Beach in St. Maarten. It is a clothing optional beach. Maho Beach is another one that is quite popular. There are tons of posts in the Caribbean Port section of this board. See if there's anything that interests you.
