Book directly through your ship. We booked through Carnival's website before we left and we were completely happy with them. When we finished with our Stingray City excursion and we were leaving the boat, one of the guides handed me a huge cleaned out conch shell. I have it in my home and every time I look at it it brings back great memories. I feel safest when I book through the ship. Although, everyone has their own preference. I wouldn't worry about Grand Cayman. I felt very safe there.
We booked through Shoretrips.com on Capt. Ron's Catamaran. There were 24 of us, went to Stingray city and two snorkeling stops (they had equipment). There were 24 of us on a really big wonderful boat. Some of the ships groups have over 100 people. People were just walking up to Capt. Ron's and booking the day of--also many many tour operators are at the pier and lots of people on this forum have booked that way and been satisfied.
