Of the 2 listed above what is the best for snorkeling and can someone recommend a good company to contact.

There is some great snorkeling in both places. In Grand Cayman, there are some good spots right near where the tender docks. I believe you can get a snorkel trip right there at the dock area. We did ours through the ship in both Cozumel and in Grand Cayman. There are tons of places in Cozumel. Xel-ha is my favorite, but there is a lot of travel required. You can take a cab to Chankanaab Park and snorkel from the beach. The snorkeling isn't as good as it was before the hurricane, but it's still pretty good. We also did a catamaran sail/snorkel there as well as a beach snorkel. But as I said, we do our excursions through the ship, unless we've found a good spot for a beach snorkel.
