Best Mayan Ruins to see and other shore excursions?

We are going on the Grand Princess in March and have the option of seeing several different Mayan sites . Our ports of call are Costa Maya, Roatan, Belize City, and Cozumel. We would like to see at least one good site, and I would also like to do a canopy tour/zip line. In short, any information on the shore excursions at those ports would be greatly appreciated. I will be a first time cruiser and have spent countless hours pouring over the internet. Here is somthing I have found for Roatan. However, since I am a first timer on the Valor in 5/07, I have no recommendations for this company, just ran across it searching.

We've visited the sites in Costa Maya and Belize. My wife is really, really looking forward to Tulum from Cozumel. If that tells you anything.

We visited Al Tun Ha in Belize in October. It was an easy 2 min. walk to the ruins and they were impressive. We booked thru the NCL Sun excursions. Others told us that some of the other ruins (Costa Maya and Gutamala) were a long HOT walk and that they were tired out before they even got to the sites.
