Shore Excursions

I have recently book a cruise commencing December 8th out of Miami with ports of call being, Honduras, Belize, Cozumel, and Stirrup Cay Bahamas, does any one have any suggestions for shore excursions? And also for anyone that has done this cruise, which has the best beach to sit, relax, have some drinks and enjoy the beautiful water? Any input you could give me would be greatly appreciated.
