I have booked guarantee (balcony cabin) for all of my cruises. Have been upgraded each time. on Carnival (2 times) I was moved up a few decks. Happy with each cabin. RCCL also had upgraded cabins each time. Princess only one category up. I would not book any other way, but if you are sharing with more than 2 people, you might need to take assigned cabin to accomodate all. I always book 1 year in advance.
