I am taking my 2 kids with me so there will be 3 of us. The Ocean view stateroom has an upper bed. Does that mean that there will be 2 beds on the floor plus the upper?

Yes, there will be two beds on the floor and the other bed will fold down from the wall. The cabin steward gets it ready every night for you then puts it away during the day.
