I wish our cruise was this Sunday! You certainly can book your excursions on the ship or even wait until you get to the port and book independently...whichever you are most comfortable with.
Put a small corkscrew in your checked luggage. If you take a bottle to dinner, they may or may not charge you a corkage fee - it really depends on the ship and the wait staff. They will also keep what remains for you until the next evening. Again, depending on who and what ship, they may let you take it back to the room. Personally, unless it is a rare sought-after wine, I'd leave it in my room and buy a bottle from them for use in the dining room. Then there are no questions or concerns and you still have it for use in the room!
