My mom and I were on the Ecstasy back in October, and we had 1 formal night. It was the day of one of our port of call days only because of Halloween and everyone was dressing up in costumes. I think normally it would be one of the sea days, but i'm not sure about that.

5 day cruises have 1 formal night and usually on a sea day.

I think they all have a formal night. I took a 3 day back in January that had a formal night.
