The Atlantis on Paradise Island (Nassau) is a great place to visit. There is a public beach next to it as well. The Queen's staircase is interesting, and the straw market is a unique experience (Nassau). Everyone has said Freeport has gone downhill, it used to be one of my favorite Bahamian islands. Maybe there is still a nice beach to visit there, it would be ashame to go somewhere and not explore a little. Have a wonderful cruise!

Did a cruise on RCCL a few years ago. They had the "Yellowboat" excursion. It was a large two deck boat that takes you to a small island for and hour or so of swimming and snorkelling. Free rum drinks on the way back ($1 tip gets extra rum).
Lots of fun.

We were there in November and you must look into the swim with the dolphins, at the Dolphin encounter excursion, they have over on the blue lagoon island, it was AWESOME, 99% of the tour did the less expensive of the two options and that was better worth every penny.

You leave from the area of the Atlantis, so when you get back take a tour of the Atlantis,

Desiree, it looks like you got some great information above that covers both general touring and more active excursions. As to booking them in advance, if there's something that strikes you as a once-in-a-lifetime opportunity, I'd book it now. For instance, the Dolphin encounters tend to sell out quickly.
