It will be a festive celebration. They will have the traditional countdown with complimentary noisemakers, party favors and champagne. Most of the lounges will have live music as well as on the Lido Deck. They'll start a count down around 11:30 in the lounges. The waiters walk around serving champagne.

You are welcome. Carnival's policy is to allow guests that are 21 and over to bring one bottle of wine or champagne on board on embarkation day not to exceed 750 milliliters. No liquor is allowed to be brought on board during embarkation. If you buy any in port, or the gift shop they hold it until the last night of the cruise and then deliver it.

Absolutely. You can bring a "limited quantity" of non-alcoholic beverages on board. I don't know what they deem as "limited", and what the cut off point is though. I usually take nearly a case of water and some soda with me without any problems. Most juices are available on the ship and are included in your cruise fare.
They allow the small personal type coolers that are no more than 12 inches in length, width or height to the best of my knowledge.
