Fascination Port of Calls

We will have a Port of Call in Key West. What transportation is provided from the ship to Key West? Our family would like to see the Southermost Point. Suggestions on how to get there, taxi? shuttle?

Also, we are doing the Dolphin Encounter in Cozumel. We have booked this through Carnival.
How do they get you to the park and can you stay longer than the 3 hour alloted time.
