Is it safe to assume that all balcony rooms will fit four, meaning do all the sofas fold out to beds?

No. Some sofas fold out and some don't. You need to look at the deck plans for the particular ship. There will be various symbols used to denote how a cabin is configured. They typically used stars, asterisks, black squares, etc. Look here for an example.

Thanks Dave. That's a big help. The more I think about it, I need to get a TA. too much that can go wrong

I agree with all that has been said. I use a TA. We talked to several before we chose one. Take you time, ask around and choose a good one.
