A tip to try for the the Behind the Fun Tour. Instead of waiting for the Shore Excursion Desk to open, try to sign up at the Information Desk. The tours are so limited you don't want to risk not getting a spot. I'm not sure it will work, but they have always let me book tours there before. Actually I have never used the Shore Excursion Desk.
