I am booking my airfare separately, and am thinking about booking a 1:15 pm flight back home out of Fort Lauderdale. My ship docks in Fort Lauderdale at 7:00 am. Is this ample time? The next flight home after that is not until 6:30 pm.

That flight is perfect. Cruise lines generally recommend flights that leave no earlier than 11:30am, when docking in Ft. Lauderdale and flying out of Ft. Lauderdale.
