We will be staying in Athens. How hard will it be to find the NCL Jewel in Piraeus? We will be taking a cab from our hotel on our own

Finding the port is easy and you will see the Jewel immediately when entering the port area itself. Be sure to negotiate a firm price with the taxi driver (have the bellman help you) to be taken to the port. Athens taxi drivers are notorious for ripping off tourists.
