Santorini Boat Tour - Looking for a review

Going on the Millennium in July and one of our stops is in Santorini. Celebrity offers a 3-hour boat tour (and Hike) of the volcano Hot Springs (I know Gilligan- 3 hour tour). I also se(searching the web) local boat toars. The local boat tours seem to indicate the tour is from 10:30 to 18:00 (over 6 hours). Has anyone taken either one of these tours. My wife wants to also walk around Fira and possibly Imerovigli.
