We will be talking the Soltice on May 15 and one of the ports is Athens. We are planning to take the tours by ourselves to avoid the structure and the cost. We will certainly visit he Acropolis and other site but we are not bif on museums. We do enjoy shopping, walking villages and outdoor cafes. Other than Plaka what else should we not miss and still be able to get to ship with plenty of time to rest and enjoy the evening

The Plaka area after the Acropolis is a nice combination. You could do more but if you want to be able to enjoy a cafe or 2 and do some shopping then I would not attempt to do much more. If you plan on taking the Metro (subway) to and from the port, then there are some nice archeological ruins sites between the Plaka and the station you could visit if you have time on your way back to the ship...
