My friend and I were discussing this last week when we were photographing some ships in the port of seattle. What are the numbers, or where can I find them?
Take a look at the cruise line websites and look at the ship's specifications. Look for the "draft" of the ship which is a measure of how deep they sit in the water (which is what I assume you meant about "how deep do cruise ships go" Unless you are in the habit of sailing on submarines.

Hey Rick, that link does not work for me.
How are your gas prices down there? Did you feel any backlash from Ike? We will up a penny or two, except for Von's which always raises their prices quicker and higher. They went up about 7 cents.
Well that has to be worth at least a 100 words!!
We will be on that ship in Oct 2009 for our Hawaii trip.
Expect gas price to rise in your area 10/18/08. That is when we will be headed to Long Beach for our Cruise. Seems like they always raise when we go on a trip.
The deeper the draft is, the more stable the ship is usually. I wouldn't want to be on a ship designed with a flat bottom. I have a boat like that and it is a bumpy ride on the lake with it.
