most likely a practice from hotels carried over to the cruise ships
People are used to hotels where the maid service is only once a day. I do find it annoying to see all those trays in the passageways. I'm even more annoyed when I see the trays untouched, or when I see room service tapping on a door and nobody is inside. Quite rude to order and then leave, and wasteful to order and not eat.

Maybe the help interpret dirty dishes in the hall as impatience on the part of the passenger. Like it's not my problm iz yours.. Just leave it like you do in the dining room, it's not McDonalds where you have to take it to the c an.

I feel the same way about it. The sandwhich I mentioned being left in the cabin was an extra that I didn't order. They always do a good job with the room service in my opinion. Sometimes things get lost in translation though. Can't blame them for that, especially when you add a southern accent to the mix.
