I have heard a lot about these conch fritters. What are they like? Scallops, clams? Where can I get them? Being from Maine, I have eaten a lot of seafood, but I have never had conch.

Conch fritters are pretty much like crab cakes. Conch has a texture like most mollusks and they dice it up and mix it with the usual breading and other ingredients and fry them up. I like them. Celebrity usually offers conch fritters on Caribbean cruises. It isn't something that is worth a quest just to savor it. It is a common thing to see in south Florida eateries, and of course in the Keys.

I love them. I just have to not think of them as sea snails. I've had the ones at Bahama Breeze in the last video. They were okay. I'm pretty sure the Conch had been frozen though as it was in Raleigh, NC. The best ones I've had have been in the Bahamas and Grand Cayman, with Club Paradise on Grand Cayman being the absolute best so far.

When I'm missing the islands (like now) I sometimes get a fix by visiting my favorite Oyster Bar Biminis for some island atmosphere and a basket of fritters.

They remind me of stuffed quahogs.
Maybe I should give them another try, we had some in St. Thomas and I really didn't think much of them. I love crab cakes and make a pig of myself at the raw bar..maybe I'll put them on my to do list...

I've had them in many variations. Some like crab cakes, some like hush puppies, some that were the conch, seasonings, and onions/celery in the inside with all the coating/breading on the outside. The last version was the best. Like crab cakes, it depends on how liberal the maker is with the conch meat. We've all had crab cakes that were mostly bread, yet every so often you find a place that makes them with mostly crab.

All this talk is making me crave crab cakes. Since I didn't get to catch any fish last week, I may have to drive up to Little River tomorrow and get some blue crab to make some crab cakes.

The best conch fritters I've had were in Nassau, then Key West, then Ft. Lauderdale. There was a bar on US1 called Ernie's and they had conch chowder and conch fritters.

I could really go for some stone crab claws right now!

I remember wandering around St. Croix many years ago while in the Marines. We were wandering around the streets looking for a place to eat and this woman called us into her little restaurant. We didn't know what to order so she said "let me decide" and gave us a fixed price. It was one of those moments when you just know you can trust the person and you won't be disappointed. We weren't. She brought out plates piled with conch fritters, kingfish, johnny cakes, and some fried plantains. It was absolutely wonderful.

Club Paradise at Abanks has a great dipping sauce concoction that is wonderful. Just enough spice and heat. They are not quite the same with cocktail or tarter sauce. Okay, now I'm hungry again.
