I joined the Marines at the tail end of the war, and so I was never "in-country". I later met and befriended many Vietnamese refugees who had relocated to - of all places - Philadelphia and the surrounding suburbs. It was there that I tasted authentic Vietnamese cuisine, usually in the homes of my new friends. Spicy! But good! I also found the Vietnamese people to be wonderful friends. I have no doubt you will enjoy your time with them.
Here is a toast to your father, and that he finds some closure in the new year.

Dwayne, you aren't living until you have the collards and black-eyed peas with a side dish of poke salat. Any southerners who grew up in the country will know what I am talking about.
Doc, I have never eaten poke. I do know what it is though. If we are talking about the same thing, they use to bread it and fry it back in Appalachia country.
