There are a few things to consider, depending on your departure time from Honolulu and the airline you're using. Some airlines have a presence at the cruise terminal when you disembark, such that you can check in for your flight and check your luggage in the terminal. Also, NCL has some post-cruise tours you can sign up for, which start at the cruise terminal and end at the airport, and your luggage can stay with you, on the bus or van, during your tour.
The two main places folks spend time are the Arizona Memorial and Visitor Center at Pearl Harbor, and the Polynesian Cultural Center. You could probably even arrange for a rental car on the ship, and drive yourselves around, and drop the car at the airport.
NCL's web site lists shore excursions for all the ports of call in Hawaii, including
tours in Honolulu after your cruise.
