Is it true that you can take your own bags off at the end of the cruise and depart immediately the ship has berthed, rather than wait for your colour to be called? We are disemarking in Instanbul and have an extra day there.

Yes, it's called express disembarkation.

You will have to wait until the local "customs" authority clears the ship, and that usually isn't when the ship docks, but awhile after.
You will also have to be capable of handling all your bags by yourself. If you have too many bags, or expect carry off services, forget it.
