shore excursions greek islands & Istanbul

We are taking a 12 day cruise on the NCL Jewel departing Sept 27,2006, which starts in Athens and ends in Istanbul. Does anyone have any suggestions regarding the shore excursions, Katakolon, Corfu, Alexandria, Cairo, Iraklion, Santorini Island, Mykonos, Izmar,Turkey. Are there any of the ports that we should definitely take the excursions or do it on our own. Thanks for the help. Leslie
