Freestyle is basically no set time for dinner. You have no assigned seating either, in any of the dining areas. No early or late seatings. When you are ready for dinner, you walk up to the restaurant and wait to be seated. You usually still need a reservation for the "pay extra" cover charge restaurants.

Freestyle -
Waiting in line.
Not being greeted by name by servers.
Forced gratuities.
No dinner "events."
No familiar tablemates.
No Baked Alaska.

Thats only in the fine print Cheffy. I never thought about the baked alaska! That is always quite the parade when they bring those out!

Freestyle means no formal nights, although you can dress to the hilt if you like. Dress code is no jeans or shorts in the dining areas for dinner.

So i guess you have to check out the ships restaurants quickly in the beginning and then make reservations for each night. Sounds like kind of stressful to me.
So far i fail to see the advantage of FREESTYLE except the dining hours
