the cruise iteneary was:

sydney-melbourne-devonport-colesbay-hobart-port arthur

the cruise itenary ended up being:

sydney-melbourne-burnie-colesbay-hobart-port arthur

can someone please explain why?

There are many reasons why cruise itineraries are changed: weather, political unrest, mechanical problems, medical emergencies, corporate decisions, port situations, and on and on....Were you given any notice or information before or during the cruise?
