Alternative dining options on formal nights?

Hi all,
4-day Bahamas Sovereign cruise is part of a three week Florida roundtrip. As we (4 pers.) have more than enough luggage to carry anyway for this long trip, we would like to rather not attend the formal night and thereby not taking suites, shirts,ties and so on with us and carry them useless trough whole Florida.
We have done formal night on Europeean cruises
anyway.
Can you tell me, if on the Sovereign the alternative dining restaurans are open on formal nights.

Mike, be aware The Sovereign is one RC's older ships and the only alternative dining option is the Windjammer Buffet. Sorrento's is to be added to the newly renovated ship - but it is a casual pizza parlor. If these dining alternatives are all that you need - then you can certainly enjoy them on formal nights.
