Must see/do in Western Caribbean?

My husband and I are sailing in December on Freedom of the Seas to Labadee, Ocho Rios, George Town, and Cozumel. I would like to try a canopy tour and my husband wants to try a mini-sub. Does anyone have suggestions for other things that we must see or do? What about the dragon's tail coaster? or the dragon's breath flight line?

I am so excited! I just booked last week, and I can already hear the drums... you know, the ones from the commercial that make you happy when you know you have a cruise coming.

Our best ever day was the Royal Swim with dolphins at Chankanaab Park in Cozumel. We booked direct with www.dolphindiscovery.com it was an expensive day but thrilling and the most memorable of all our excursions.

White River tubing in Ocho Rios ...getting there is half the fun!

Also, if time permits, take a cab down the Seven Mile Beach area; pick a wonderful spot on the beach (hopefully near a walk up bar) with some shade available, and enjoy the views and the water. Its inexpensive and a nice way to end an afternoon before tendering back to the ship.

I second the motion for Sting Ray City in Georgetown-it was great fun and amazing-also for the Dolphin Show in Cozumel

Definitely try to do Stingray City in Grand Cayman. I did this excursion on my last trip and it was a great experience.

We use Captain Marvin's for the Stingray City tour. It's a must do thing in Grand Cayman...

We second the vote for tubing the white river in Ochos. It was one of the best we've done.
