leaving this week on so caribbean cruise and wanted to know other than the 2 dressy nights what is everyone wearing for the dinning room at eve meal? Aso for the formal night would shirt & tie w/dress pants work if hubby ony has one sportcoat for one night?

Dress on formal nights is pretty much up to the individual. Other than the obvious (i.e, no shorts) I've seen every extreme, from good taste to not-so. We tend not to like overdressing, so we usually go with "neat" but not "decked out", and we fit in just fine. Bottom line -- wear whatever you're comfortable with as long as it's reasonable. Remember that some people really do like to dress up, so you don't want to stick out like a sore thumb. A shirt & tie will work just fine for your husb; you could always say he left his jacket in the cabin :-).
