Formal night is Tuesday, March 28.
The TV in the room will have a station playing information about shore excursions, CNN, a couple of movies, a station playing the same movie in a different language, replays of a talk or game show that went on the night before, plus various other channels of news or perhaps an old TV show.
We did the Breezes all-inclusive excursion last year. There is a beach area with different kinds of water toys you can use (windsurfers, sailboats, etc) if the wind is not too high or the water too rough. There is a pool area with lots of beach chairs and at least a couple of bars. There are restaurants, and lots of grounds to walk around and explore. The pro is that it's a good value for the money, since the watersports, unlimited drinks and big buffet lunch are included. The con for us was that we got there around 10:30 or 11am and several people made it obvious that they'd already been drinking for an hour or two and they weren't holding it all that well. But that may not be typical. We were curious to see what an all-inclusive was like, and this was a perfect way to do it without investing a whole week of our time.
We spent our evening on the ship, having dinner and finding other things to do. In fact, on our cruise, I think the ship sailed in late afternoon.
There are no lockers on Coco Cay, but there are lots of different beach areas and tons of beach chairs, umbrellas, hammocks, etc. Everyone brings a bag of some sort, so don't worry about leaving your bag on your beach chair if you go into the water or when you go to get lunch. You can take your camera or cash with you if you don't want to leave them there.
I've never done the parasailing.
