I am sailing on EOS 2/8/07. We are in room 3001. Where is that located, and should we try to change? Are interior rooms on higher levels more expensive and when we check in, can they switch us to a different open room?

Cabin #3001 at the Enchantment lays at the front of the ship.

Any cabin within a similar category is higher priced if it is on a higher deck. It is rare that a ship sails these days with lots of open cabins - which means the chance of getting a different cabin upon check-in is not that good.

The price of a cabin depends on which catagory they are. On the Enchantment the interior staterooms on decks 4,7, and 8 are catagory K and L. On decks 2,3, and 4 you will find catagories M,N, and Q. Not really any difference in the cabin size. 140 to 146 sq ft.
Cabin 3001 is a catagory Q, which is the lowest priced cabin. Price don't very too much if you decide to change your cabin.
