What is the average amount of money spent on tipping? (5 day cruise) Should we carry a ton of cash or can most of the expenses go on our credit card we registered with? (at the end of the cruise)

For a 5 day cruise the average amount is 50-55 $ per person and maybe some extra Dollars for special service.
You can pay the tips with your creditcard at the end of the cruise or you can decide to pay the tips in cash. You get already prepared envelopes for the cabinattendant, the waiter, ***. waiter, maitre.

$10 a day per person is the average tipping added to your onboard account. It usually covers your cabin steward, waiter, and assistant waiter. You need some cash for tipping baggage people, and taxis, and if you want to give the above people extra (you can also add the extra to your onboard). Tipping on drinks is automatically added to the bill at 15%.

RCCL still uses the "cash in envelopes on the final night" method as their primary tipping procedure, however at any time during the cruise you can simply have these tips added to your onboard account (and therefore paid by credit card) by calling or going to the guest relations desk. You will get cards to put in the envelopes for the last night presentation of tips, which will show the amount you have given to the person via your account. I like RCCL's system because it allows the guest more control as opposed to those used by other lines which default to the automatic charge for tips to your account.
