My sister and I couldn't quite remember the sizes of the beds in the cabins, when there are three people in the cabins. Are the beds twin size?

All beds that sit on the deck are standard single sized (aka "twin") no matter how many people the cabin holds. If the cabin has a sofa bed it depends. We've had a sofa that pulled out into a double bed size, but we've also had a smaller sofa bed that was twin sized, perhaps a little larger. Pullman beds for a 3rd berth are strictly single sized.
