I have another question. What is the difference between Island time and CST time? Is there a difference. I booked a Swim with Dolphins in Cozumel. Mariner arrives at 10:00. My confirmation says 2:00 Island time.

Island time simply refers to whatever the local time is at each port of call. I've even seen the term used for well-inland Fairbanks, AK! Anyway, Cozumel should be on central time. The cruise lines usually list their arrival and departure times in the zone local to that port.
