I cannot tell you abot the "FREEDOM" but from the AOS I can tell you this
if you are talking about the "special night" when the serve food at midnight it's mostly a place to taste a few good food samples it's not a as big as you will think and as I remember most of the cruise companies has limited this kind of activities
I hope they bring back the midnight buffets but I took the AOS in 2006 so who knows this have changed a bit...
Most cruise lines did away with their nightly midnight buffet many years ago. These days, most have a special "gala buffet" at midnight once during a 7-night cruise.
Cruise lines have at least a couple of places that serve food until very late at night, be it pizza, pastries or "little bites" being passed around in various public rooms.
The cruise lines stopped their huge nightly buffets mostly because of tens of thousands of passengers objecting to the waste of food. All the food that doesn't get eaten has to be disposed of. It can't be reused or donated to poor countries, or anything like that, because of U.S. health regulations. The amount of food not eaten each night became a rallying point for passengers, organizations and the like. Plus, folks who had late seating in the dining room complained that they were still so full from dinner, which often ended after 10pm, there was no way to eat more at midnight.
In the early days of cruising, the midnight buffets were one of the big attractions of cruising, when the idea was new. These days, with exotic itineraries, ice skating rinks and the like to attract passengers, there is more interest in the quality and presentation of food at meal times and less attention paid to the massive quantities of food available at all times. Passengers are still not going home hungry even without the midnight buffets. I doubt we'll see them return any time soon.
There are also a couple of nights where they will have deck parties with buffets by the pools, live music, and dancing under the stars. The usual themes are Caribbean Island Night and Mexican Night. These buffets are more of a snack variety than a meal. Taco fixings, jerked chicken wings, bar food really - which is the idea since these parties are more about selling drinks than the food. They can also be a zoo.
Was a LONG time ago since I went to one (about 25 years ago). I was a kid I did get excited about it..Was just wondering..If they offered one not too sure I would go.

I'm so glad you're going to cruise again. It wasn't 25 years for me, but it was a long time in between cruises. Once I got back on board, there's nothing else I want to do for vacations
On the Freedom you'll also have the 24 hour Cafe Promenade which has different kinds of sandwiches, cookies, pastries. Plus the Sorrento's Pizza is open until early morning (I think it is 2 or 3 am).
A point to note: Royal Caribbean's room service is available 24 hours but from midnight to 5am they levy a $3.95 per order service fee.
