Hi rlm10128, welcome to Cruise-Chat. From all the reviews I've read, you've chosen a wonderful ship. We haven't had the pleasure of sailing her. For the specialty restaurants, you can sign up when you board. Just go to the dining rooms you want to visit and there should be someone there to make reservations for you. You can call from your cabin, but it would probably be easier by doing it in person. The children will be fine at Johnny Rockets by themselves, I believe the hours are from 11-8, but SonnyV will know for sure. If you visit our Caribbean Port Chat section you will find plenty of suggestions for the ports you mentioned. You can use your find feature in the upper left hand corner of your post and type in your ports you're interested in. The find feature will bring up all the relevant posts. St. Thomas/St. John (you can take a ferry over to St. John from St. Thomas if you like) will be your best spot for snorkeling. St. Maarten and St. Thomas are great ports for shopping if you like that. For San Juan, a tour of Old San Juan is very interesting as well as the bioluminescent tour or the gardens.
